Semolina cake

This is a middle east recipe, some people in the middle east call this cake “Basbusa”, think about it when it will dissolve in your mouth…

Ingredients:

For the Cake:
For the syrup and decoration:
1 1/2 cups of semolina
2.5 cups of sugar
1/2 cup of self rising flour
2 cups of water
1/2 pint of sour cream (200ml)
juice from half a lemon
0.520 pint of whipping cream (250ml)
1 teaspoon of rose water
1 cup of white sugar
almonds
1 cup of milled coconuts

3 fresh eggs

1 teaspoon of vanilla extract
 

Preparations:

1. mix the cake ingredients all together

2. put into a baking pan

3. put into a preheated oven to 350 F (180C) for about 40 minutes or until it’s brown (like in the pictures)

4. make the syrup: boil sugar with water, after the sugar is dissolved add the lemon juice and boil it for one more minute.

5. pour the syrup on the cake when the cake is ready (it seems a lot of syrup but the cake absorb it all)

6. decorate with almonds.
